Bread making is about making the most of what we have; about appreciating what grows in the soil, what is local, and being economical and resourceful with it.
Bread is resourceful in and of itself. Through its making process it reinvents its own essence by transforming its ingredients into a new material.
My attraction for bread dough as a material grew over my time spent at the bakery. It is the expressive tactility of a mysterious and living substance which caught my attention.
